Onions and Shallots are the same species, but they have a few differences as they differ in shape, taste, and size. Onions come in the category of vegetables.
They are of bulb shape and covered with layers of skin which are peeled off during cooking or using onion in any of the dishes. While Shallots are small and oblong, they can also look like Onions depending on their varieties.

Onions are oval from the bottom and are often called bulb shapes. The bulb part of the Onions is partially outside, while the rest of the bulb part is dug in the sand. The top part of the Onions contains a soft green stick-like structure.
That green part is called spring and is used in making salads. Sometimes when Onions are in their initial stage of growth, they are taken out, and those are called spring onions.
Shallots are subsets of Onions, or we can say that they belong to the family of Onions. Shallots are smaller in size as compared to Onions and are also bitter, but after cooking, Shallots become sweet.
Shallots have good shape, which is why they are mostly preferred for making dishes or salads more attractive, and also, they can be easily melted into a syrup.

Onions contain some chemical which, when reacted with moisture in the air or your eyes, produces another chemical called sulfuric acid, which causes irritation in your eyes and results in tears or watery eyes.
That is why Onions should be placed in chilled water before chopping as it washes out the chemical that causes watery eyes.

Shallots are also like Onions but have different colours, odours, shapes, and sizes. They are small Onions with less cellular solid structure because of which they can be easily chopped.
Shallots are tasteful and rich in minerals and vitamins like vitamin a, vitamin c, and vitamin k. A fully grown Shallot has a tinge of golden brown colour on its outer layer.
Shallots are planted during the springtime as they need both moisture and sunlight. The soil in which it is planted should be very fertile with proper moisture in it.
Like Onions, they also have the green part on their top, which is edible, but they do not have a pungent smell like Onions have. They may have a more bitter taste, but it depends on their growth stage.
